Arm Roast

The Arm Roast, which is cut from the beef chuck primal, is one of the most popular pot roasts.

Beef Stew Meat

Beef stew meat typically comes from the large shoulder of a cow, more commonly called “chuck”. But roast, top and bottom round, tips, and even steak can be used as stew meat.

Brisket

Brisket is a cut of meat from the breast or lower chest of beef.

Chuck Roast

Chuck Roast is relatively inexpensive cut with loads of beef flavor. Moist and tender when slow-cooked.

Filet Mignon

Filet Mignon is the most tender steak, lean yet succulent, with a fine buttery texture. Sold boneless.

Flank Steak

Flank Steak is lean and boneless with lots of intense beef flavor. Best when marinated and grilled or sliced thin and stir-fried.

Ground Beef (85/15)

Ground round fits into this category of “extra lean ground beef,” and is cut from the hind part of the cow, near the tail. It is tender, but not as juicy because of its reduced fat content. Use this meat cooked into chili or any dish that calls for sauce.

Ground Beef Patties

Beef patties are pre-pressed from our 85-15 Ground beef and are available in 1/4 and 1/3 lb options.

New York Strip

New York Strip is tender, lean, and perfect for grilling.

Ribeye Steak

Ribeye Steak is rich, juicy and full-flavored with generous marbling throughout. Sold bone-in due to the exceptional taste and tenderness.

Round Steak

Round Steak comes from the inside of the rear leg and is very lean. It can be fabricated into steaks, which benefit from tenderization or marination, but is commonly roasted and sliced for Roast Beef.

Rump Roast

Rump Roast is an extremely lean cut of meat that comes from a cow's posterior end. Cooks often use it for roast beef.

Short Ribs

Short Ribs are full of beef flavor and fall-off-the-bone tender. Also available boneless. Grill or slow roast for a succulent beef dish.

Sirloin Steak

Sirloin Steak is a flavorful cut that’s versatile and juicy. Great served as a steak or cut into kabobs.

Sirloin Tip Roast

Sirloin Tip Roast is boneless, lean cut, and is great value. Best when roasted and carved into thin slices.

Sirloin Tip Steak

Sirloin Tip Steak is boneless, lean cut, and is great value. Makes good Kabobs, Stew Meat or Cubed Steak.

Skirt Steak

Skirt Steak is known for its robust flavor profile. Marinate and grill hot for fajitas or use for stir-fry.

Soup Bone

Soup bone, also known as stock bones, are the remaining pieces left over after the butchering process. While there is not enough meat on them for a full meal, these work wonderfully for adding more flavor to your soup.

T-Bone Steak

The T-bone and Porterhouse are steaks of beef cut from the short loin. Both steaks include a "T"-shaped lumbar vertebra with sections of abdominal internal oblique muscle on each side. Porterhouse steaks are cut from the rear end of the short loin and thus include more tenderloin steak, along with a large strip steak.
